I still don't get it. Beetroot, lettuce?
Is it Baby Lettuce, meaning small lettuce? But that is not a phrase that anyone every uses. Neither is Baby Beetroot.
"Things that can be brown" is one of the loosest connections I've ever seen.
"Things that go in a salad" is pretty weak too.
